| Sweet breakfasts are rarely part of my life story. Pancakes, yogurt parfaits, cereal, and French toast never sound as appetizing to me as something savory. And my savory breakfast ingredient of choice is the forever-classic egg. | I could eat eggs in every shape and form — scrambled, sunny-side up (or down), poached. Our office fridge stocks prepackaged hard-boiled eggs, which I devour at my desk. (Sorry, not sorry to my deskmates.) But if I had to choose one of my favorite ways to consume eggs, it'd probably be in a frittata. Let me explain why in today's recipe below. | | | | Happy end of June! - Skip meat altogether to keep it vegetable-forward.
- Replace the zucchini with broccoli, sweet potatoes, bell potatoes, spinach, or a combination.
- Throw in other leftover herbs, such as chives or rosemary.

Our different preferences toward mushrooms aside, I think we can all agree that dashes of hot sauce and ketchup are always delicious additions to frittatas.
