I love quick and easy recipes, especially in the morning when my energy is low and my appetite is high. Like the creature of habit that I am, I've been making the same breakfast tacos for 6+ months now. I whip up 2 or 3 over-easy eggs with salt and pepper, spread one mashed avocado across corn tortillas, and top each one off with hot sauce. Simple, filling, fresh, and gluten-free — and it only takes maybe 10 minutes!

Avocado toast and scrambled eggs
"While the kids are getting dressed, I pop slices of whole grain bread into the toaster. Then I beat 1 whole egg plus 2 egg whites and a splash of milk per serving and pour the egg mixture into a frying pan with some butter. The extra egg whites result in light, fluffy eggs. As the eggs heat up, I gently move them around the pan with a spatula. Between folds, I cut a ripe avocado into thin slices and then layer them on the toast as it's ready. I top the avocado toast with Everything seasoning and serve the eggs on the side. On days when I have a few extra minutes, I also slice up some strawberries.
This meal is a favorite in my house of picky eaters (myself included), and because it's so easy, I'm actually able to eat breakfast, too. It takes less than 10 minutes to make the whole meal, and clean up only takes another 1 to 2 minutes." — Megan Severs, senior editorial director

"I recently hopped on the cottage cheese trend. It can have flavor when you add the right ingredients! For this breakfast toast, I spread cottage cheese on a slice of sourdough. I broil it in my air fryer for a few minutes and top it with red pepper flakes and a drizzle of hot honey. I love the way the cheese browns after broiling. "I'm a morning person — aka the *best* (most annoying) type of human being. After my workout, I need something quick, refreshing, and protein-packed — for muscle growth, of course.
